Kombucha: Preparation

To prepare the Kombucha potion by yourself you need:
  • A glass that is at least 2,5 liters big. Kombucha cultures only feel good in such huge glasses.
  • A healthy Kombucha culture. You can maybe get it from other Kombucha friends or in a health store.
  • About 200 ml of Kombucha potion as a starting liquid.
  • 2 teaspoon of dried black tea.
  • 2 liters of water.
  • 200 - 250 gramms sugar.
  • A clean piece of cloth to cover the opening of the glass.

How to prepare Kombucha potion:

  • Heat 2 liters of water until it boils.
  • Put 2 teanspoon full of dried black tea into the water.
  • Let it stand for five minutes, then filter the tea.
  • Put 200 - 250 gramms of sugar into the liquid.
  • Stir the mixture to solve the sugar.
  • Wait until to sweet tea is cooled down.
  • Pour the cool tea into the huge glass.
  • Put the Kombucha culture into the tea with the glossy side upside.
  • Pour 200 ml of Kombucha potion onto the culture. If you don't have such potion, it also works without, but the process take longer.
  • Cover the glass with a clean piece of cloth.
  • Put the glass at a warm place. Best is 23°C, but 5°C more or less are ok as well.
  • Wait 8 - 10 days. If it is cold, the process takes longer and if it is warm, the process is faster.
  • The Kombucha potion is ready when it stops bubbling. When it is still bubbling it taste like young wine and contains more alcohol. If you wait much longer after it is beeing ready, the potion gets more sour. You can test the potion by taking a spoonful and taste it.
  • Filter the potion and put the liquid into a refrigerator. It is ready to drink.
  • Wash the Kombucha culture with cool or lukewarm water to remove all the brown fibers.
  • Keep the culture in a small covered glass filled with Kombucha potion. Like this it can wait some hours or few days until the next preparation.
  • Start the next preparation as soon as possbile.
